Morning Gorgeous! Time for me to give you the complete rundown of this Pad Thai dressing that has transformed my veggie-consumption from level 2 to level 300:
🥜(chunky) Peanut butter
🥜Red Thai Curry Paste (optional!)
🍁Ginger, finely chopped/minced
🍁Fresh chili 🌶 finely chopped 🥜Red bell pepper
🥜Tomatoes 🍁Tofu, cubed (optional!) 1. Mix the first three ingredients. Ratio depends on how YOU like it. Don’t be afraid to experiment, bc that’s how you make your life YOURS and not the copy of somebody else’s, which isn’t meant for you/won’t appeal to your liking anyway (yes, deep freedom philosophy definitely applies to the things you are consuming, make it perfect for YOU) ☺️ 2. Add in EVERYTHING else you can think of that you want to marinate in the peanut-y goodness. Just think; will it get mushy by sitting there overnight? Is that what I want?
3. Let marinate in the fridge overnight (or however long you can contain yourself for 😜).
4. Add ANY other fresh vegetables to the mix. I ALWAYS add zoodles and extra lettuce. I once also added frozen & re-thawed pumpkin (which was AMAZING in combination with the peanut flavor 😍🤤), but you could also add cucumber, avocado, red cabbage (which would probably be best to marinate tbh) and what not.
