PUMPKIN 🎃 PIE 🥧 BAKED OVERNIGHT OATS 🍃🍂🍁 Ok if it’s not already clear, I LOVE fall. And yes, I love everything PUMPKIN SPICE too! My room currently smells like a pumpkin spice latte thanks to a candle from target. So of course I had to come up with a fall version of overnight oats!!! These recipe tastes like warm pumpkin pie (according to my boyfriend) and he is not wrong! It’s like eating a slice of pie for breakfast AND it’s good for ya!!!! 😮
Try it out for yourself! 🎃 1/2 c plain rolled oats (or instant) 🎃 1/2 c pumpkin purée
Mix those together in a bowl and really incorporate them together to create a paste.
🎃a huge dash of cinnamon or pumpkin spice (I used a dash of cinnamon + sprinkle of allspice)
🎃 1 c almond milk (unsweetened vanilla is what I get) 🎃 2 tbsp chia seeds
Throw the rest of the ingredients with the paste and mix. Cover and let it sit overnight.
Bake at 350 for about 45-55min in an ovenproof pot or ceramic bowl (or muffin pan). It’s done when the top is nice and brown n crispy 🎃
