Stop buying bottled Caesar salad dressing 🤚🏻! You can make your own in less than 5 minutes with ingredients you can pronounce (ok, maybe not Worcestershire) and take your salad game to the next level 🥗🏆. If raw eggs freak you out, substitute a tablespoon of mayo. If mayo freaks you out.... 🤷🏼♀️🤷🏼♀️🤷🏼♀️. One last note on anchovies 🐟....It’s not really a Caesar without them. I wholeheartedly recommend using them - omit only if you absolutely have to.
RECIPE: In a medium bowl whisk 1 egg yolk with 1 tsp Dijon mustard, 1 clove minced or microplaned garlic, 1/4 tsp Worcestershire sauce, 1 tbs lemon juice, 1 tbs white wine vinegar, 1-3 smashed and minced anchovies (according to taste), 1/2 tsp salt and a few cracks of fresh black pepper. Put 6 tablespoons olive oil in a measuring cup and slowly pour it in to the bowl, whisking constantly. You can prop the bowl on a slight angle using a kitchen towel to keep it steady.
Dressing keeps refrigerated a couple days. To assemble salad, toss romaine leaves with dressing and add shaved Parmesan, croutons and more fresh pepper.
