Weekly shop + small weekend top up haul.
This month I'm trying to keep our grocery budget low, because I've overspent on food in august and September. I still have a decent stash of meat in the freezer, so truing to meal plan around what we already have, and just buy fresh produce, dairy etc.
Today's shop was just under $60, and I was able to get decent deals on peppers ($4) and apples ($0.66/lb). And price matched a few things: celery (1.27), tomatoes (1.27/lb), mandarin oranges ($4.97), bread ($2.47,), pomegranates ($1 ea) and cream cheese ($2). ________________________________
The weekend bread run (2nd pic) was just a few things to tie us over until today's shop. Total was around $17.
Meal plan for the week.
Breakfasts: pumpkin pancakes, oatmeal, pb&honey toast, bagels etc.
Baking/snacks: pumpkin rolls with cream cheese frosting, fresh fruits and veggies, cheese.
Lunches: chicken &lentil soup, leftovers, salmon salad sandwich, ham sandwiches for hubby.
Dinners: 🥘butter chicken over rice with broccoli;,🥐 piroshki (kind of like Russian calzones) with cabbage and/or potatoes and salad; 🥘beef chili (from freezer); 🍲peanut butter chicken stir fry; 🍝wieners, pasta and salad; 🍠sausage and sweet potato sheet pan dinner; 🍗flattened roasted chicken and veggies with polenta. One of the positivity prompts in my new journal last week was this:
“What was your favorite meal as a kid? Plan to eat this in the next week. What memories does it bring up for you?”
Instantly I thought of my moms meatloaf, mashed potatoes and peas, hello comfort food, and then I realized I have NEVER made this for my kids. So I added this to the menu and we had this for dinner last week. Not only did they LOVE it, but it actually sparked conversation about my childhood and we sat at the table telling stories. Talk about food for the soul 💕

It’s a tie for me between the rice (I used powdered coconut milk this time, made a huge difference because of the freshness) and the crab, that crab was so good you hear me!! Just wanted to give something to think out the box, us New Orleanians can eat red beans and rice every Monday, technically the peas (beans) are red so I’m keeping up with tradition. 😜

I steamed some broccoli but it didn’t come out good...so I did plan B (simmered celery & carrot)! It’s always nice to be prepared for unexpected😉lol.

Before and After: Roasted squash is my jam dudes. I threw it on top of my favorite garlicky kale salad with some avocado for bonus points. Highly recommend this combo. Two thumbs up 👍🏻👍🏻
Getting motivated to get my eating back on track. This week I started experiencing some symptoms of unbalanced hormones again. And let me tell you they are not fun. Hot flashes, hair loss, acne, and I can’t frickin stay asleep at night. So I knew it was time to get my shit together and start eating as clean as I can.
I have never successfully made lasting changes to my diet. Sure I can do a master cleanse for 10 days. Eat vegan for 8 weeks but long term was never something I thought possible. I don’t know if I’ll be able to do it this time but I know I gotta try.
