Sometimes in the darkest days you have to look towards the light in the distance. You have to know that eventually what your going through will pass. That’s the main reason I set #goals for myself. I may stumble and fall and feel like a complete failure sometimes, but then I think about why I’m doing what I do. I think about the #results in the end and how good I’ll feel when I finally reach my #goal and it helps to keep me #motivated and moving forward. I am so far from perfect. I experience depression and self doubt often enough, but I know that those storms will pass and I’ll eventually get where I want to be. It’s not easy, but once I reach my goal I realize that all the work was worth it. Set a goal for yourself and do what it takes to reach it. *Super Supper Sunday = A quick dinner recipe and prepartion instructions.
*Today's recipe - the Buffalo Chicken Bowl:
4 ounces of Chicken Breast
1 ounce of Rice (sub - cauliflower rice for low carb)
2 ounces of mixed vegetables (pictured - broccoli and carrots)
1 ounce of Spicy Banana Peppers
1/2 ounce of Mexican Cheese
*Sauce: 2 tbsp Greek Yogurt and 2 tbsp Buffalo Sauce *Meal Prep 2 pounds of Chicken in the Crockpot. (use chicken for various meals throughout the week)
*Boil rice on the stove (always let rice simmer in the pot to obtain desired texture)
*Use fresh or frozen mixed vegetables, sometimes frozen is just easier!
*Mix Greek Yogurt and Buffalo Sauce thoroughly in a separate bowl.
*Add desired seasoning - I added Cayenne Pepper, Himalayan Salt & Black Pepper.
*Toss all contents into a pan on the stove on medium heat for 5 minutes...and Boom! Delicious!
*Add some fresh avocado if you need more healthy fat.
