COCONUT LEMON BLISS BALLS

When I asked you what kind of recipes you would like to see more of, most of you requested snacks! No surprise there. I’m a snack junkie too 🙌🏻 these where the most refreshing bliss balls I ever tried! No-bake, vegan, gluten-free and no refined sugar 🤷🏼♀️ Ingredients
1/2 cup cashews, raw, unsalted
1/2 cup coconut, shredded (plus more for rolling)
1 cup Medjool dates, pitted chopped
Add the cashews to your food processor and pulse until nearly flour-like. Add the shredded coconut, pitted dates, and lemon zest to the mixture and pulse until it all sticks together!
Roll into balls, and roll each ball in some extra shredded coconut.
