Easy Korean Ground Beef & Broccoli 🥦 Since the school year has started, our house is always in some state of chaos between homework, dinner, playtime, bath, and bedtime. Trying to cram everything in a 4 hour period is definitely a challenge, so I’ve little time left to dedicate to posting meals these days. But I promise I will do my best to keep them coming. Thanks for hanging in there. 😘 This meal is so simple to put together with tons of flavor, and most ingredients you’ll likely have on hand. It’s great for those chaotic weeknights. 🤪
2 tbsp Olive Oil
1/2 Sweet Onion chopped
5 Garlic Cloves minced
2 lbs Grass-Fed Ground Beef
1/2 tsp Salt & Pepper
1/2 cup Beef Broth plus more for mixing
3 tbsp Tamari (or Soy Sauce)
1 tbsp Fish Sauce
1 tbsp Honey
1 tbsp Rice Wine Vinegar
1/2 tsp Toasted Sesame Oil
1 tbsp Cornstarch
4 cups Broccoli Florets, par-steamed
4 Scallions chopped
Cooked White Rice, Sesame Seeds & Sriracha for serving
1. Heat olive oil in a large non-stick skillet over medium heat. Sauté onion and garlic until softened. Add ground beef and cook stirring and breaking up until browned throughout. Drain the fat with a spoon while carefully tipping the pan. Season the beef mixture with salt and pepper.
2. While beef is cooking, whisk beef broth, Tamari, fish sauce, honey, rice wine vinegar, and sesame oil in a small bowl. Add sauce to the beef mixture when beef has been cooked through and fat drained; stir.
3. In a small bowl, mix cornstarch with 3-4 tbsp extra beef broth until smooth. Pour into the beef mixture and stir. Cook another 2-3 minutes until slightly thickened. Add broccoli and stir to coat. Turn off heat.
4. Serve over white rice. Top with scallions and sesame seeds. Serve with sriracha on the side.
