•a pot for boiling •a skillet for sautéing •a good knife •a spatula
•a strainer (or something to take the pasta out of the water)
•serving bowl • 2 cups of mushrooms (I used baby portobellos), sliced •a small onion, finely chopped
• a couple cloves of garlic, finely chopped • a handful of parsley, roughly chopped • olive oil • 1/2 cup parmigiano (or other hard cheese) some grated some grated, some broken into small chunks
•@knowfoods pasta twists (or other gluten free pasta)
•salt & peppa!
What to do:
Heat olive oil in skillet on medium heat. Add onions and garlic sautéing until you can smell them. Add the mushrooms. Let them sautée until golden (it’s tempting to add salt here, but DON’T, it will keep your mushrooms from getting the gold!). While@the mushrooms hang out, start your water. Once it’s boiling, add pasta. If using #knowfoods brand, let boil ONLY 1 minute. If using another brand, I might suggest backing off the cooking time slightly. Drain the pasta. Give the mushrooms a shake/stir, add salt & pepper, stir again. Place pasta on top and add grated parm. Toss everything together. Add most of the parsley. TASTE. If it needs more #s&p, add it here. Pile everything into a serving dish. Top with remaining parsley, scallions, and the chunks of parm. You can also drizzle over another swig of olive oil if you like. Enjoy! #gloobyfood

When I set out to lose weight for good, I started trying new (to me) ingredients. It opened up a whole world of recipe possibility – not to mention more than a passing familiarity with my neighborhood @sprouts.
With a serious hat tip to @pinchofyum, this new health chapter also included an introduction to almond flour (lookin’ at you, @bobsredmill), and this Blueberry Crisp. It is always in my fridge. No seriously – when I’m down to the last serving, it’s akin to being out of milk.
I love it with a tablespoon (or two) of homemade vanilla honey whipped cream. As a post workout breakfast, paired with pimiento cheese or egg salad for lunch, or as the occasional after dinner dessert. Add a sprinkle of nutmeg and pumpkin pie spice and OMG – bliss!
Calorically speaking, it’s on the indulgent side of what’s in my normal rotation. But in half cup servings, it’s still well within reason – and a much healthier way to get my sweet tooth fix.
Try it with most any blend of seasonal berries. Can’t beat a summer fruit combo right now, or the price points that make this a budgetary best bet – hello @aldiusa strawberries for 88 cents! It’s just as delicious with a frozen berry blend. All hail the hot fruit crisp!
