This play on pasta e faglioli is one of those clean-out-the-pantry, no-recipe type dinners that's so good, it deserves a recipe!
Here's the basic idea: Saute chopped onion and garlic in olive oil until soft; add anchovy paste and red pepper flakes and cook until the anchovies melt into the olive oil. Bring a 28-ounce can of whole tomatoes and 2 cups chicken stock to a simmer, and add 3/4 cup pearled farro, 1 can of white beans, and a handful of pasta (such as broken lasagna noodles). (Throw in a parmesan rind if you have one!) Simmer until the farro and pasta are tender, about 15 minutes, adding more stock (or water) as needed. Season with salt, pepper, and a pinch of sugar. 4 medium chicken breast, pounded to even thickness OR 6-8 boneless chicken thighs skinless or with skin
sea salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon red chili flakes optional or to taste
3 tablespoons butter OR olive oil
1/2 small onion chopped
3 garlic cloves sliced or minced
2 teaspoons Italian seasoning
1/2 teaspoon lemon zest
Juice of 1 medium lemon
3-4 tablespoons heavy cream
Chopped fresh parsley and lemon slices, optional for garnish
Season chicken with salt, pepper and garlic powder. Heat butter /olive oil in a medium-sized cast iron skillet over medium-high heat. Add chicken and cook for 4-5 minutes on each side, or until chicken reaches 165 degrees. Transfer browned chicken to plate and set aside.
Return pan back to heat and melt butter. Stir in the onions and garlic. Add lemon juice to deglaze pan and cook for 1 minute. Add Italian seasoning, lemon zest and chicken broth. Stir in heavy cream and allow to thicken and bubble. Add the chicken back into the pan until heated through.
Sprinkle chicken with chopped parsley and serve hot with your favorite sides. Spoon sauce over chicken and garnish with lemon slices, if desired.

As the temperature drops and the days get shorter, I am in desperate need of cozy comfort food. This roast chicken pot pie is what I crave this time of year.
