Paired them today with J Vineyards and Winery, Cuvée XB. Extra-brut, 53% Chardonnay, 45% Pinot Noir, 2% Pinot Meunier; bottled in February 2012 followed by 32 months on the lees;
Light lemon color with tiny bubbles; high intensity on the nose with plenty of brioche, golden apple, poached pear, chestnuts and honey. Fresh, crisp, creamy; palate matches nose with nutty, slightly pithy finish. .
