Well, this is what playing with chickens instead of cooking looks like folks 🐓🐓🐓 No sweat though they’re under all my macros for my breakfast on the meal plan so I’ll make sure I add in some more throughout the day. What I’m learning is to not let one bump in the road completely derail my plans for the day. #justkeepswimming
Keto Peanut Butter & Jelly Mug Cake
I only eat half, but what a special treat when you are having that keto sweet tooth! So simple to make and super fun to create! You could add nuts, cinnamon, chopped apples, dark chocolate or sugar free chips.. let your imagination carry you!
My recipe is........
3T Smuckers all natural organic peanut butter
2 drops butter extract (optional)
Mix all these ingredients thoroughly with a fork until it's texture is like cookie dough.
Then, in a mug add 2T heavy cream and put peanut butter mixture on top. Put mug in microwave for 1 minute 45 seconds. Dump mug upside down on a plate.. it should fall right out. I added 2T Smuckers sugar free strawberry preserves.. You can add any flavor sugar free jelly you want🙌
8 net carbs for the entire cake! If you eat half that's only 4!
✨KETO SHAKSHUKA RECIPE✨
👩🏻🍳I literally made this recipe up, playing with leftovers at home one afternoon when I wasn’t in a rush to go train another client. Cooking for myself is one of my favourite #selflove activities.💕
🥫Organic Tomato Sauce
🐮Grass Fed Butter or EVOO
🍳Pastured raised eggs
🛒Onions and Garlic
🌱Organic Spinach, Arugula and Parsley
🏔Himalayan Salt •
1️⃣Heat grass fed butter or extra virgin olive oil in skillet. Add the onions, garlic and pinch Himalayan salt. Cook, stirring frequently, until the vegetables have softened, about 10 minutes.
2️⃣Add the organic tomato sauce, and organic spinach. Simmer until the tomato mixture begins to reduce.
3️⃣Using a wooden spoon, make 2 indentations, or “wells,” in the tomato mixture (make sure the indentations are spaced out). Gently crack a pastured egg into each indention.
4️⃣Reduce the heat, cover the skillet, and cook on low until the egg whites are set.
5️⃣Uncover and add the fresh parsley and arugula. •
I also garnished with some smoked sockeye salmon and a bowl of my signature salad 🥗🤤.

42 trips around the sun and I’m letting you all know that I might just eat the damn cheesecake. So don’t even worry about calling the low carb police 👮🏼♀️ because they’re off duty tonight 🤷🏼♀️😂.
42 is mind boggling to me in some ways. And in others it feels like it’s gone by in a flash. I kind of can’t believe I’m broadcasting my age. But the reality is I kind of DGAF 🙌🏼 Ok. Not kind of. I just don’t.
I’m realizing that I’m proud AF to be “over 40” + healthier than I was at 20. My husband on the other hand would say “hotter” 🔥 than I was when he married me 😂.
Looking back I’ve definitely accomplished more than I thought I would by now. Looking forward, no doubt there are bigger things waiting.
I love what I do. It’s the reason I’ve been successfully helping women keep the weight off + transform their lives for over 11 years. But reflecting on that, I want to make an even bigger impact.
How much longer will I be coaching clients 1:1 or offering my online weight loss + fat loss course? I’m not sure. Transition is brewing.

Jello fat bomb gummies! I love these guys because they are essentially 100% fat. It's helpful when I am struggling to reach my macros. Plus they are delicious. It's just Jello, gelatin, and heavy cream! I made a batch of cherry and a batch of lime last night. They do a great job of satisfying a candy craving too! I'll post the recipe in my stories 😄

Spicy Keto Benedict
This is dank, low carb and high fat.
2 large eggs
1/2 medium avocado
2 pieces thick-cut bacon
1/4 cup shredded cheddar cheese
2 tsp sriracha sauce
1 tsp everything but the bagel spice
2 tbsp unsweetened almond butter
1 tbsp butter
2 tbsp almond flour
1/8 tsp salt
1/2 tsp baking powder
1 tbsp unsweetened almond milk
First, make the english muffin. It’s no big deal, it takes 5 minutes:
Brush a ramekin with a little olive oil.
Add the almond butter and butter to the dish.
Microwave for 30 seconds and mix until smooth. Set aside to cool.
In a small bowl whisk the almond flour, salt and baking powder together.
Pour the milk and an egg to dry ingredients and stir until combined.
Pour this mixture into the ramekin with the almond butter mixture and stir to combine well.
Microwave 2 minutes.
Allow to cool a few minutes before taking it out of the ramekin.
Toast as desired.
Now for the rest:
Fry the bacon.
Poach an egg.
Put the bacon on the muffin.
Slice the avocado and place over the bacon.
Sprinkle on the cheese.
Add the poached egg on top.
Drizzle with sriracha.
Shake on the seasoning.
Makes 1 serving at 30g protein, 65g fat and 10 net carbs.
Top with 1 tbsp of sour cream to push the fat an addition 3g plus less than 1g protein and 1g net carbs.
