Food day at work! I love that I can still partake while staying on plan. The first plate has sausage dip (sausage, cream cheese, rotel) and chicken cheese ball (chicken, cream cheese, ranch) with some veggies to use as scoops. (The purple things are moondrop grapes but I took one bite and spit it out, they just didn’t taste worth the sugar/carbs to me!) The second plate is a deconstructed sub which includes deli meat, cheese, lettuce, tomato, mayo, mustard. Teriyaki kebabbed steak on a plate, keto style. Forgot to grab a pic on the skewers! Perfected marinade (see prev post), oven roasted broccoli and baby brussels in a bit of olive oil with S&P (super quick and delish) and a caesar salad with bacon instead of croutons. I was out all day today so the steak only sat in the marinade for 1 1/2 hours (it’s best marinated at least 4 hours or overnight). The result is the grill marks aren’t as defined as I’d like but it was still tender and tasty despite the short marinating time. (I cooked it in the oven at 450 on a grill rack because we’re between bbq’s right now.) My husband’s plate also had a big bun on it because he’s not keto and I’m not forcing it on him. #ketodinnerideas #steak #kebabs
Yes yes yesss... keto and teriyaki combined!
I successfully converted my old teriyaki marinade, previously carb-loaded with brown sugar and soya sauce.
I ketoized it by using Tamari sauce (coconut aminos would work too), freshly minced garlic (note powdered garlic will not give it the same intensity), powdered ginger, and sweetener. (I used @lakantosweetener). I also added a small swig of avacado oil because I was marinating steak. (I’d probably omit the oil if using on chicken.) Most of my cooking is ‘to taste’ and I don’t follow or use measurements ... so this was the same — to taste, but the ingredient combination worked.
Once you’re happy with the flavour, marinate your meat for at least 4 hours in the fridge or overnight. (I’ve even made the marinade, cubed the meat (if for kebabs) and thrown them together in a freezer bag, to be frozen for another time.) I love teriyaki and wanted a keto-healthy marinade that worked for me, yet also tasted great enough for my non-keto family to still enjoy and not notice the ketoized difference! ✅ Success. #ketodinner #teriyaki #sugarfree #steak #ketoized

On the left, was September 2013. I had started taking RX diet pills (AKA amphetamines) months before that photo for a wedding I was in & had managed to lose 25 pounds just in time. I fought & struggled to lose every single one of those pounds in a relatively unhealthy way & I was still 35 pounds heavier than I am today, but also 5 years younger. 🤔

🍪 My first keto cookies since starting in March. Until now I’ve really resisted doing much in the way of keto sweets, but am consciously trying to slow my weightloss down a bit so my body can catch up a bit to the pounds lost — and am able to eat a bit more. I followed the recipe by @lowcarbspark for her Best Keto Chocolate Chip Cookies. Only change I made was the sweetener — I used @lakantosweetener Monkfruit sweetener. These are BIG cookies! Recipe suggests 10 but even as big as I made em, I got a few more than that. Not having had keto cookies before, I don’t have anything to compare them to at this point... but although a bit more ‘dense’ than typical cookies, these hit the spot for sure and I would make them again, although out of curiosity am going to try other recipes too for comparison! 😉 #ketotreat #sweetketo #ketochocolate #ketosnack #chocolatechip
So, here’s something crazy that I haven’t shared with a lot of people. When I was first diagnosed in 1998 with hashimotos and my weigh shot up from 122 to 184 in less than 6 months. If course eating the SAD didnt help, along with sleeping nearly 18 hours a day...the craziest thing i ever believed i wanted to do was gain MORE weight...in order to qualify for an insurance backed weight loss surgery! Im sure grateful to have found the healing through keto! Whats the craziest thing you ever dis, or thought of doing in order to lose weight?

What do you do when you’re tired. Like really bone deep tired. Tired of being the different one...not fitting in (keep in mind...I am basically on my own on this journey. No gym partner. No walking buddy. Not even one family member on board...they eat total opposite of me, not even anyone really being supportive. I get a LOT IF STRANGE LOOKS, questions of why am I doing this to myself (the being so strict...I am pretty much 100% keto. No booze (personal decision...that’s another post on healthy coping mechanisms) and lots of exercise). I get a lot of oh come on. One meal, one day , one bite won’t kill you. A lot of skip the gym and come playyyyy. What do you do when aren’t seeing staggering results anymore? What do you do when you are sore, sick, sleepy, overwhelmed, lonely, (sneezy, grumpy and doc?) You dig deeper. You look where you came from and ask yourself...do you want to end up there again? You get real and honest and find a part of you that is strong,determined, disciplined and fierce. You realize that you are the only one who can save your own life. You are the only one who knows what a slip up day might do to you. That going to the gym is the only coping mechanism you have right now (because you gave up the booze and the binging and the other bad coping skills) and you might lose your shit if you don’t go. You will start to see who really wants the best for you. Who really is in your corner. You might have to let go of some others. Don’t let them drag you back down. You’ll realize that your body will do what your mind believes it can. You let go of negative self talk. Push through. Work hard. Look higher. Set goals (short term and long term) other than weight loss. Celebrate accomplishments. Join a group. Read a book. Journal. Move your body. Take a nap. You wake up and be a bad ass.
