Veggie sushi burrito! 😍😊I’ve never been a big fan of seafood but I got hooked on veggie sushi in college. Mostly just avocado and cucumber but I love it! So delicious!
No official recipe but here’s what I did:
Steamed a bag of cauliflower in microwave. Added garlic powder, onion powder and salt. Pulsed until rice-like In food processor. Transferred to skillet on medium to steam off excess moisture for a few min.
Then let cool completely and added it to 2ish ounces of softened cream cheese and a splash of soy sauce/liquid aminos/whatever you like.
Then thinly sliced seedless cucumber and avocado.
Placed a piece of nori on a sushi mat and covered it with the rice mixture except for about an inch at one end (for sealing)
Placed the sliced veggies together on the closest end of the roll and began rolling tightly while moving the mat and pinching together firmly.
For dipping sauce I mixed 2 tbsp mayo, and a little sriracha.
This made two very filling rolls that my husband and I shared.
I didn’t do nutrition for this but apps like my fitness pal and Cronometer can calculate yours if you make something similar. This dish fits my macros. Feel free to adjust and enjoy according to your own macros and what you like.
