It may not be beautiful this night. But my belly could not be more enticed. Prime rib burgers and green stuff. And an enormous pot of bone broth in the making for later.
Since I have been asked and it is pictured....I use cast iron whenever possible (cast iron pots, griddle, etc are on my Christmas list). Number 1.....bc I do not trust nonstick. Sketchy. Number 2....bc there is research that says cast iron lends iron to whatever you're cooking. I need iron. I'm pretty sure I have been anemic my entire life....something about my blood cells. But I made it so so much worse with my stint of way too much dairy (dairy blocks iron absorption)...so I have eliminated dairy and am sorta exclusive with my cast iron.
Whipped up a quick meal with random stuff from the fridge. Alfredo chicken and broccoli - super yummy.
My Alfredo sauce is
2 Tbsp butter
1/4 cup cream
3/4 cup grated parmesan
chicken broth - optional
garlic powder and pepper to taste
Melt butter (let brown for extra yum) then whisk in cream, cheese, and seasonings. If sauce is too thick, thin with broth or add more cream.
I just added shredded chicken and ate some with cooked broccoli. Still have a bit leftover for lunch tomorrow.

-6chicken legs +back
-1can of whole tomatoes peeled and chopped into big pieces,you need only the tomatoes not the juice
-1can tomato paste (156ml)
-1/4 cup olive oil
3 tbsp each of sage,parsley,basil,italian seasoning,onion and garlic powder
1 can black olives sliced
-8oz mushroom sliced
-1 onion sliced
-2red peppers sliced
-3 garlic cloves chopped
-1/4 cup white wine
-salt and pepper
4 bay leaves
Roast the sides of the chicken legs with or without the skin if you desire.
In the slow cooker add and mix the olive oil ,wine,peeled tomatoes and the paste spices,herbs,veggies and olives . Add the chicken with the bone on the top and let it simmer for 4 hours or until well cooked !add 30 mins before the end the mushrooms ,salt and pepper and adjust to your taste ❤️
Getting my #tacotuesday on with these jicama round tacos. Topped with my #BurkesGardenFarm ground beef that I ordered from Crowd Cow, shredded Monterey Jack cheese, chopped onions, cilantro and a drizzle of @bluetopbrand jalapeño lime hot sauce. A lot of you have asked me about the jicama rounds. They provide a nice, crisp crunch but are pliable and don’t really taste like anything. This doesn’t bother me because I want to taste what I put in them anyway 😋 #nourishmygut

Dinner tonight is pan blackened/air fried chicken and creamed spinach. I had this chicken marinating in some garlic and herb marinade for way too long, so I went ahead and cooked it tonight. I put a little blackening seasoning on it and threw it in a hot cast iron pan for about a minute on each side, then into the air fryer at 400° until it was done. (I don't do cooking times. I've been cooking long enough that I just know when chicken is done) Then I sauteed some spinach, a little bit of white onion, some heavy cream, and some mozzarella. I don't measure these things, just toss in what looks good. I heated that in a skillet on the stove until it all melted together. It looked great, but I figured I'd "bake" it a little in the air fryer, so I put it all in this ramekin and tossed it in for about 6 minutes. It was really good! This has quickly become a favorite in our house, and its simple! Just throw some broccoli florets and cut up brussels on a tray, top with olive oil, salt and pepper mix it all up (get in there with your hands and really toss it) throw some bacon on there and pop it in the oven at 350° for 20 minutes. If you like them a little more toasted leave them in a few more minutes.
