This past weekend, I had the pleasure of celebrating the wedding of one of my dearest secret keepers, @shananic. The beautiful, intimate wedding was held on the beach in Ocean Isle, NC. My friend is pretty laid back. Low key. Not too high maintenance. However, when she gets rattled over the few things that work her up, she gets rattled. She told a few of her vendors, including me to “just be creative”. At first, this seemed like such a blessing. But, when it was time to finish this cake off, I thought I might have a panic attack. I was so worried that she wouldn’t like it or it would clash...or anything my anxiety-crazed mind could come up with. I kept envisioning her freaking out because the end result wasn’t what she wanted!
I was excited to finally get to play with the “watercolor” technique with buttercream. That made me happy. But, then I panicked over whether I was showing too much white...or green...or pink...or...ANYTHING. Lol
When i couldn’t wait any longer, I boxed her up and drove her the four hours to the beach. When I arrived and pulled it out of the box, I was so in love with how perfectly it fit in the picture of the entire scene that was her wedding. Suddenly, I fell in love with this cake. 💕
Inside of the bottom tier is vanilla butter cake with a pineapple filling. The top tier is a vanilla cake with fresh berries. Both tiers were iced in vanilla buttercream.
The colors don’t show too well here, but there was a bright pink, a deep fuschia, ivory, and green. The couple supplied their own topper. Most importantly, they were happy and there was no rattling. 😍
Dark Chocolate Cake. Rich, slightly dense, and slightly bitter cake. Frosted with dark chocolate ganache. Decorated with Oreos and various white, milk and dark chocolates.

This cake is on its way to a special little guy who is spending his first birthday with his family at @luriechildrens Hospital in Chicago. His name is Max, and just like his namesake in Where the Wild Things Are, he is fearless. How amazing and honoring is it that I get to be a small part of creating a memory for Max’s family? 🍰

Icing Smiles is a nonprofit organization that provides custom celebration cakes to families impacted by the critical illness of a child. We understand that the simple things, like a birthday cake, are luxuries to a family battling illness. Our goal is to create a custom cake for the ill child, or their sibling, that provides a temporary escape from worry and creates a positive memory during a difficult time.
Memories have magical powers. Long after the cake is gone, the memories linger – memories of the kindness of a stranger, of the art of the design, of the sweet smells of a special treat, of the smiles and laughs, of a normal childhood experience so often stolen from these children. These memories are why we say, “It is so much more than a cake.” 🎂

Thank you also, to the bride's other Aunts (I'm an aunt from one side of the family), Nicole Reyes, Natalie Flores, and Anna Robinson, for their awesome floral arranging on the cake. We made a great team!
I was very impressed with the couples natural instinct (no coaching from anyone) to take out just a small piece for their cake cutting/first taste, instead of slicing a giant slice. Looked so perfect.
On the inside was the same chocolate cake & buttercream as my last post (top tier), & my yellow cake with truly lemon buttercream & Raspberry perfection buttercream (bottom tier). To die for. They turned out SO good. I love that aside from looking good, the inside tasted even better. To me, that's the most important.
An extra little thing I discovered while making this cake: When making my truly lemon buttercream, you can put the lemon juice & zest into your blender & blend it full strength to break down the zest even finer. It was great. This cake was large (16" & 12"), so I had a larger amount of juice & zest for my blendtec to work on. A single batch, however, will sit below the blade & not get processed. So maybe try a magic bullet, & see if that can do the job. I'll be trying that soon... with my baby bullet. 🤣
Recreating this pumpkin cake with maple cheesecake filling & chocolate ganache frosting but with a different design for a dinner party tomorrow! Recipe is from @cakebycourtney ✨🙌 a lot of people ask where I get my recipes from and most of them are either from Pinterest or other cake bakers!! There’s no shame in making someone else’s recipe - that’s why they are putting it out there for the world to see so someone can try it! Hopefully one day I can start creating my own recipes from scratch and find inspiration from other desserts that I love! Who are some of your favorite bakers to follow that share their recipes?!
