My 2nd attempt at poached eggs! The first time was a few years ago, and I was told to boil eggs without shells. So thats what I did... Hard boiled eggs without shells... Yuck. They were slimy and gross. I never tried again until today. A friend gave me some pointers yesterday so I tried again and OMG. So good.
Add a pinch of salt and a splash of vinegar to 4 inch deep water (the eggs do not pick up the vinegar flavor) bring to a boil. Crack the egg in a small mesh strainer to strain the super liquidy whites. Transfer the egg to a small bowl or ramakan. Take the pot, with boiling water of the heat and use a spoon to stir until the water is a swirling vortex, and add the eggs. Cook for 3 to 4 minutes and voila. Perfect poached eggs!
