There's a misconception that being vegan limits your diet. It's actually just the opposite though. Since going vegan 2 1/2 years ago, I have such a larger variety of food to eat and seriously enjoy cooking. 💖
I've learned how to make dozens of vegan and plant-based meals from scratch - like black bean burgers, tikka masala, and nice cream. I crave fresh fruits and vegetables, and find myself feeling tired and unmotivated if I don't eat enough of them.
Today I made a panini using a leftover kidney bean burger, mixed greens, sauteed veggies, and avocado. Pressed it in my panini grill for about 5 minutes...and poof! Deliciousness! 💫
