The most simple, delicious carrot soup ever! Lemony and gingery!
2 tbsp butter
3 cups chopped carrots
1 onion chopped
1 tbsp minced ginger
1 1/2 lemons grated for zest
2 minced garlic cloves
4 cups chicken broth
2 tbsp lemon juice
Salt and pepper to taste
Cooked onion in butter until tender. Add ginger and garlic and cook for two minutes. Add lemon zest and carrots and cook for 5 minutes. Add broth, bring to a boil then simmer until carrots are tender. Purée with immersion blender then mix in lemon juice, salt, and pepper. Garnish with a dollop of sour cream or plain yogurt and grated carrot! .
Where beverages are concerned I'm all herbal tea! It's one of my fave parts of the day. 😊 .
