Topped with a spoon full of homemade hummus and two fried eggs with some beetroot on the side 😍😍😍 sooo yummy you have to try it

Hey guys hope all of you doing good.. this post gonna be after a long while because i was quite busy in work so could not post any post but finally i m back with something new here is the fried egg we call it sunny side up and i made it as a signature of the day in our spectacular breakfast.. here i would like to let you know that about this amazing fried egg.. make it sunny side up.. on another hand prepare chicken for topping... use minced chicken, sugar, soya sauce, fish sauce, black sauce, lite chilli, and basil..
Cook in the pot if its too much nor cook in the pan if it isnt too much.. once it done do topping and dressing however you like its your choice dressing.. we call it as a laab praw gai in thai..

🍳 Zucchini & Sweet Potato Hashbrowns
⏲ Under 15 mins | Serves 2
Enjoying this delicious breakfast on this beautiful Saturday morning☀️ Feels good to finally be able to sleep in! My body has been drained since the cruise & finally I got to sleep in & cook some yummy breakfast. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
▫️1 medium Zucchini
▫️1/2 medium Sweet Potato
▫️Seasonings - salt & pepper, chili powder, garlic powder, cumin, smoked paprika
Start off by grating both the zucchini & sweet potato into a bowl. Add in some salt & let it sit for 15-20 mins to drain out any excess water.
Once that’s done, transfer to a towel & wring out any remaining water. In a mixing bowl, add in the hash-browns, olive oil, & seasonings.
Heat up a waffle iron (I used my mini waffle iron from @unprocessyourfood) & transfer the hash-browns to the iron. Cook accordingly or until brown & crispy.
Serve with a sunny side up egg, sliced avocado, & cooked spinach. Season with sesame seeds, salt & pepper!
