It’s seriously been a CRAZY summer and an even CRAZIER fall. Between us photographing weddings, being in weddings, and having our own wedding our diet has been terrible.
We’ve ate out way to much and consumed a lot of fast food. So today I went grocery shopping and spent more than I wanted to, butttttt we had like no food on our house.
Tonight I made a really easy and quick dinner. Veggie burrito bowls!
Here is what I used for the two of us:
👉🏻 2 cups of brown rice
👉🏻 1/2 an avocado
👉🏻 8 cherry tomatoes
👉🏻 1/2 a jalapeño
👉🏻 1 small can of sweet corn
👉🏻 1 can of black beans
👉🏻 1/2 a sweet potato cubed
👉🏻 siracha drizzle
We have left over avocado, jalapeño, sweet potato, corn, and black beans. Which I’ll use on other meals this week! Stay tuned for the 7 day meal plan and prep guide.
