An unforgettable evening with Cuca Bali @panpacificsingapore where we were served 20, yes 20, delightfully quirky and delicious tapas inspired by the flavours of Indonesia and beyond.
To name a few (see if you can identify them in the pic):
Crackers of caramelised seeds and dehydrated cherry tomatoes.
Popcorn chicken served on popcorn.
Cream cheese filled sweet potato crisps on a bed of roses.
Chili peppers stuffed with savoury minced meat.
Sweet baby corn rolled in Parmesan powder.
‘Magic mushrooms’ of earthy mushroom purée on tater tots.
Warning: speed drinking a combination of bubbly, wine and cocktails does not bode well for the morning after.

Salt and Vinegar Roasted Potatoes, with a za'tary twist - The salty, tart flavors of salt and vinegar potato chips in a healthier roasted potato version, this recipe is pleasurably tasty! A perfect side to many dishes: shawarma, roasted chicken/fish, burgers, and so on!
The flavours play off so well against each other, and something about that sprinkle of za'tar against the saltiness gives it all such a mouthwatering twist, not to mention a lovely aromatic smell!
The recipe is in my highlights. Nothing complicated about roasting potatoes, and there are probably millions of recipes out there! However, I love experimenting with flavours.. especially using potatoes! They love and absorb flavour so beautifully!
Begin by soaking 7-8 peeled, washed and sliced potatoes in a 1/2 cup of apple cider vinegar and water for around 30-40 min.
Once time has passed, place the pot of potatoes, water, and vinegar on medium heat and let the potatoes cook till soft.
Once cooked, line a baking tray with parchment paper, and pre-heat the oven to 450 degrees F. Place the potatoes flat on the parchment, and skoar each one making vertical lines.
Drizzle with olive oil, and sprinkle with paprika, garlic powder, coarse salt, pepper, and za'tar! Be generous!
Bake at 450 degrees F on the bottom rack till the bottom of the potatoes is golden brown and crispy! Then transfer to the top rack and broil till golden brown and delicious!
