I'm ending this pumpkin series with a spread I savored with some homemade Belgian Waffles.
I know you’re thinking it has absolutely nothing to do with typical Haitian cuisine, and you're absolutely right. But it was too delicious for me not to share it with you.
Adapting a few recipes, I:
- roasted and mashed a mini pumpkin, - cooked it with gros sirop (molasses), brown sugar, nutmeg, powdered star anise, lime juice and dark Haitian rum
- buttered that mixture onto my waffles
It has me drooling again this morning! 🤤
