I don’t always cook all of my food when I meal prep for the week. A lot of times I’ll chop up veggies for cooking mid week. It makes having a fresh, healthy meal super simple.
I like to cook food a few days at a time and have the rest prepped and ready to go when I run out.
All of these veggies were pre cut (besides the delicata which took a minute to chop). All I had to do was toss in a little avocado oil and spices and sprinkle the squash with cinnamon and they all went in the oven at 375° for 45ish.
Eating healthy does NOT have to be hard or take a lot of time. 🍽
