I know that sometimes I prefer to be in the safe zone than have that weird airy feeling of uncomfortableness where my chest feels hot, my stomach feels tight, and my heart pumps fast. But through my experiences of being in uncomfortable situations, I learned if we don’t challenge ourselves, we are not learning, growing or getting stronger. You will be surprised about how you feel after getting uncomfortable. I know I feel so light and feel untouchable. No longer what was uncomfortable is now comfortable. #wednesdaywisdom .

Sweet potato “crackers” with pecorino, pecans, and hot honey 🍠 I love making sweet potatoes like this, because they become these sweet and savory cracker-like things that are so much better for you and better tasting than a boring old cracker. The topping possibilities are endless, but this is one of my favorite combos.
Peel a sweet potato and cut into 1/4 inch rounds. Drizzle with olive oil and top with salt and pepper, then roast them in a 400 degree oven for about 30 minutes (turning halfway through). Top with pecorino, sweet and spicy pecans (recipe below!), a drizzle of @mikeshothoney, and @maldonsalt1882 flake salt.
For the pecans: whisk 1/2 cup of powdered sugar, 3/4 teaspoon of kosher salt, 1/2 teaspoon of cayenne pepper, and 4 teaspoons of water in a large bowl. Add 2 cups of pecan halves and mix to coat. Spread them out on a parchment lined sheet pan, sprinkle with flake salt, and bake at 350 for 15 minutes. Set aside and let the pecans cool completely.
Sometimes you look at a recipe and think it can't possibly be good, and then you try it anyway and get somewhat pleasantly surprised. Tex-Mex Fusilli: ground #beef, jarred salsa, chili powder, some cheese and cilantro. Very semi-homemade 😝

Chunky Monkey Choc-PB recipe:
In a food processor blitz 2 frozen bananas, 2 tbsp @nuttabutta_oz Crunchy PB, 1 tbsp raw cacao and a few splashes of coconut water.
Scoop into a bowl and top with fresh fruit, coconut, a scoop of PB or your favourite granola ✌
