Monday got me feeling PUMP(kin)-ed about this week, and MUFFIN can stop me!! Heading into two weeks of midterms this week, and I’m determined to practice self-care in every way possible: getting enough sleep, eating nourishing foods, good study habits, workouts, and (easy to forget) spending time with friends! Putting it out there and telling y’all so you can keep me accountable ;) So far, we’re one morning workout and one day of meal prepped eats in, so it’s going well. dEATS: Costco organic pumpkin quick bread mix made into monster muffins! I only have 11 silicone baking cups, so instead of 12 normal muffins, I made 11 giant ones. Added a dollop of pumpkin cream cheese in each for maximum fall feels - def the right move. Excited to attempt to enjoy these all week in yogurt bowls - who thinks I can make ‘em last till Friday!?
