I went on a pickling spree!👇🏻 I love to add these to my salads/Buddha bowls because it tastes good but also because it promotes a healthy gut! ——————————————————
1/2 head of purple cabbage
1 red onion
2 medium beats
1 1/2 cups AVC
2 cloves of garlic
Optional: An added pinch of salt to each jar.
Chop purple cabbage into small chunks, you’ll have to kind of break the chunks up into small pieces.
Chop red onion however small you’d like, I prefer the pieces to be larger.
I spiralized my beats, but you can cut them however you’d like.
Boil beats for 10 minutes using filtered water, strain, but reserve some of the water, that will be what you use to fill the rest of the beat jar up.
Then it’s simple, just add the veggies into different sealable jars, pour (a heaping) 1/2 cup of AVC over them, and fill the rest of the jar up with filtered water (except for your beats, use the water you reserved from after boiling them). Seal jars, shake, and let sit in the fridge for 3-5 days before opening. *I popped two raw garlic cloves into my beat jar because they’re better that way in my opinion 🤷🏻♀️
