My family has dinner every Sunday evening. (We’re just like the Reagans on Blue Bloods ... well minus the New York cop thing ... and despite my efforts, we don’t have any boy band members in the family.) Normally, these dinners are pretty rich, so I compensate by eating really light during the day. But tonight we’re having a pretty light (albeit decadent) dinner of lobster, salad, and roasted potatoes, and that means I can eat today.
I really love scrambled eggs in pita. Today’s scramble includes onions, peppers, and tomatoes. I added a slice of #boarshead havarti for a creamy, delicious breakfast treat. Served with a grapefruit.

A pita filled with scrambled eggs, bacon, ham, jack and cheddar. My dot loves to add salsa verde and some green onion. I'm keepin it simple, although a mac's lounge hashbrown would put this over the top!

1 cup whole milk ricotta cheese
1 cup grated mozzarella cheese
2 tablespoons chopped cilantro (plus more for garnish)
salt and black pepper
4 pieces of whole wheat pita
4 strips of bacon, cooked until crisp and chopped
4 eggs, fried, poached or scrambled
1 large avocado, pitted and sliced
hot sauce (optional)
1. Preheat your oven to 425 degrees F and line a large baking sheet with parchment paper, foil or silicone baking mat. Set aside.
2. In a small bowl, mix the ricotta cheese, mozzarella, chopped cilantro and a dash of salt and pepper to taste.
3. Smear the cheese mixture onto the 4 pieces of pita bread. Place in the oven and bake for 8-10 minutes or until the cheese is melty and the pita begins to crisp up. Remove from heat.
4. Sprinkle on the bacon and place the egg on top. Sprinkle with fresh cilantro and top with avocado.
5. Drizzle a little bit of hot sauce if desired. Serve immediately and enjoy!

Loved this egg scramble pita. Organic sprouted whole wheat pita, 1 egg & 2 egg whites scrambled, 1/4 cup @fage yogurt, and a little salsa. 👌🏼

Breakfast never tasted so good. Flax Oat Bran & Whole Wheat Pita Bread with avocado, mini Bella mushrooms, cherry tomatoes with a sprinkle of chipotle pepper! Oh and can’t forget this cute mini banana 🍌
It may look a little questionable but Palak paneer and rice on a pita is amazing. Spinach stewed in spices isn't a pretty thing, but the flavor and scent is so good. Skip the rice and pita and this would be #ketofood too!
