Personal story time:
Two years ago I found out I had Celiac disease. I was DEVASTATED. I really thought it meant I would have to say “goodbye” to all my favorite comfort foods. On top of that, I must confess that I was one of those chefs who scoffed at “gluten intolerance” and “celiac disease”. I thought people were just trying to be trendy. I was wrong. Now that I’ve experienced gluten headaches, stomach problems, and rashes.
I can tell you it’s not a “trend”. I tried a lot of pre packaged “gluten free alternatives” for everything from pasta to bread. I have found some good ones and a whole lot of bad.
I’ve tried every major gluten free flour and made my own blends.
I’ve tried (and special ordered) every type of gluten free beer.
Here’s what I’ve learned the past two years:
Saying goodbye to gluten doesn’t mean saying goodbye to the foods you love. By applying cooking knowledge and techniques there’s a way to make every recipe gluten free AND delicious.
This @cup4cup is the BEST gf flour on the market. It’ll make a perfect roux, wonderful fresh pasta, excellent cookies, and it’s undetectable in terms of taste.
As far as gluten free beer it’s pretty bad out there. Except for the guys @burnbrosbrew their craft brews are the best around. If you have a chance to try them, DO IT!
I plan on sharing what I’ve learned in the world of gluten free cooking with you guys and will try to answer any questions or requests you have about any recipe.

Little Bitty Potato Poppers! These Potato Poppers are soft and tender potatoes filled with cream cheese, sour cream, cheddar, garlic, and chives and then baked until soft and bubbly and melty! The PERFECT Sunday Football appetizer!
West Adams/LA | Anytime shrimp and grits is on the menu, I definitely order it. Last night’s dinner was at the newly opened Alta West Adams out on their beautiful patio. Soul food favorites we ordered included black cod with a habanero sauce, green beans in a spicy tomato sauce and corn bread. A really great dinner with excellent service. 😊
* Tomato & Cream Cheese Pasta 🍝 * I’ve been experimenting with cream cheese so much lately and wanted to try it in pasta. Because cream cheese is the best 🙌🏼 It’s an easy way to add creaminess to a sauce and switch it up from the regular marinara I always use. Bow tie Pasta
2 tbsp @lovemyphilly cream cheese
1 small onion
1 tsp minced garlic
1 can (12 oz) diced tomatoes
1 can (8oz) tomato sauce
3 chicken sausage links
2 handfuls of spinach
Italian seasoning & red pepper flakes
Topped with parmesan .
When you're in the mood for comfort food, don't want to tackle the cold weather, and have 30 minutes to whip something up before your kids wake up from their nap! 😎 Vegetarian poutine with a Mexican touch! 🍟🌶️ Here's my simple and quick recipe:
- Air fry Cavendish Farms' salt and cracked pepper chopped potatoes for 25 minutes (they get nice and crispy, and I chose this flavour for the mild spiciness) 🥔
- In the meantime, make the vegetarian poutine gravy of your choice
- Add shredded mozarella cheese (a lot of it is hidden under those veggies 😉) 🧀
- Add the vegetarian poutine gravy
- Top with vegetables of your choice. I threw in black olives, corn 🌽, scallions and hot banana peppers 🔥. You can also include chopped tomatoes. 🍅

This week is all about white beans and warm dishes as we transition to this cool weather 🍲❄️
I didn’t like any of the protein sales this weekend and had a limited amount of time so I adapted two recipes involving white great northern beans. At .99 cents or less a can, they’re an affordable, vegetarian friendly source of protein + fiber.
🥑: my short-cut version of @cookinglight‘s Tuscan white bean soup requires less prep work and just a stove top. It starts with a quick mirepoix, then chicken broth, spinach, + white beans make the core ingredients. Quinoa cooked in chicken broth adds a light grain. Tons of @traderjoes lemon-pepper and a pinch of cayenne brings all the flavors together. Full recipe coming soon #thenewhealthy 🥄
