Crispy Thai Mussel Pancake- Hoi Tod 🇨🇷 Ingredients: (Serves 4)
80g rice flour
20g tapioca flour
1 and half cup cold water
3 spring onions (green onion)
6 stalks coriander (cilantro)
Pinch of salt and pepper
Recipe • Mix flours, water and salt & pepper. • No lumps. • Heat frying pan with oil till hot. • Ladle thin layer batter mixture and place mussel onto batter. • Flip batter when base is crispy. • Crack 1 egg into middle pancake.
• Gently break and smear egg into mixture. • Flip pancake cook till egg is cooked. • Remove pancake, garnish with beansprouts and coriander. • Serve with sriracha.
