SURPRISE I'M ALIVE!! So. My hiatus isn't totally over yet BUT I just had to share that I have a cooking corner now and yall. I cooked for the first time in 3 MONTHS! My first time cooking since I've moved to Taiwan! I could write a novel on all the food I have eaten since moving here. Spoiler alert, none of it has been keto.
I wanted to see how my body would react to eating a HEALTHY but non-keto asian diet. It's been... interesting. While I haven't gained any weight, I look about 20lbs heavier from all the bloating, inflammation, and lack of muscle tone. It's real pretty, lemme tell ya.
So my ceremonial first meal was thin sliced beef (honest moment- thought it was bacon when I bought it), bok choy, mushrooms, butter, and... I think they're like pork skins but I really don't know for sure haha! I threw in some sea salt and a cumin/spice blend.
It was surprisingly delicious!
O how I have missed my low carb meals! I felt energized all day whereas I usually get in a slump after a few hours of the typical rice/noodle based meal.
